I made stuffed zucchinis for the first time a couple weeks ago and since then they have been a staple in my weekly diet. Simple to make and packed with flavor – what else could one be looking for.
Ingredients:
1/4 to 1/2 tsp salt
1/4 tsp curry powder
handful of cherry tomatoes
1 tsp thyme
2 zucchinis
1 onion
1/2 cup feta cheese
3 roasted red peppers (I use the ones in the jar)
Directions:
Slice the zucchinis in half length wise and scoop out the guts until you end up with boat shells. Chop up the zucchini pulp, onions and tomatoes. Saute the chopped veggies in a pan and add curry powder at the end and saute for an additional 30seconds. Transfer the mixture to a bowl and add chopped red peppers and feta cheese. Add the salt, thyme, and a pinch of pepper. Place the zucchini boats in a baking dish and fill with with spoonfuls of the mixture. Bake at 375F for 45mins.
